Charlie and Delta's are Fire Pumps, primarily used for Fire turnouts.
For instance, at my Station 32, if it is a Rescue / RCR call, then Alpha will respond first. If it is a Fire / AFA then Charlie will roll first.
It all depends on the turnout, and what we are attending to whether Alpha and Zulu will attend, or Charlie and Zulu or Charlie and Victor will attend.

Zulu is a composite Fire / Rescue and also Area Spare.
When a pump goes offline in a Area, then the area spare which is a composite fire / rescue pump will be sent to their station on loan while their pump is offline (usually only when their pump is in for service).
Every Area will have a Spare composite Fire / Rescue Pump.
In South West, which is Region 3, there is 7 different Areas, and each area will have 1 Zulu, normally attached to the larger and busiest station.
When a pump goes offline in a Area, then the area spare which is a composite fire / rescue pump will be sent to their station on loan while their pump is offline (usually only when their pump is in for service).
Every Area will have a Spare composite Fire / Rescue Pump.

For info in North Coast haven't heard of any zulus, the area spares are generally bravos (auxiliary pumps) and then the auxillaries use the spare charlie. Prob just because Maroochydore is the only station with more than one permanent crew (india/lima). Dunno if that's always the case tho

Obviously Alpha and Bravo are Rescue Pumps so can do the same job.
So i can only speculate that at Maroochydore is simular, where the Auxiliaries use the Bravo, however when the Alpha is offline, they must use the Charlie, as the Permo's will be using the Bravo.
Doesn't make sense to me as what would happen if the Permo's were out on say a fire call, then a call for Rescue came in. The Auxiliaries would have to respond to the permo's location, to take over their tasking then the permo's turnout to the rescue, as the Charlie is a fire pump and has no rescue gear on it.
But every region is different in how they task their available appliances.

Not sure about other areas/regions but in Brisbane:-
Case 1 - High Pressure Hose Reel, 25mm internal diamter high pressure hose usually with Akron Defender nozzle
(on a standard Scania with "Waterous" pump up to 550 litres per minute at 4000kpa pressure)
Case 2 - Accessing reticulated mains pressure directly via a standpipe or pillar hydrant (usually 38mm, 51mm or 64mm duraline lay flat hose with Protek 366 or 367 controllable nozzle)
Case 3 - Normal pressure deliveries from pumper, (usually 38mm, 51mm or 64mm duraline lay flat hose with Protek 366 or 367 controllable nozzle or AWG solid core nozzle) -on a standard Scania with "waterous" pump up to 4500 litres per minute at 1000kpa pressure.
Case 4 - drafting from an open water source (eg pool, dam, river, lake, ocean) using suction hose to allow water directly into the eye of the appliances pump casing. water can then be delivered via Case 1 hose reels or case 3 deliveries or monitor.
Monitor - roof mounted water cannon which can be removed and placed on a ground base if required.
CAFS - Compressed Air Foam Systems - uses compressed air, water and foam concentrate to produce a foam solution which is more versatile than foam concentrate and water alone. It uses less foam and less water to achieve similar outcomes, as well as making the hoses lighter for increased firefighter agility.

South East region use those cases, I think it's safe to say it's probably uniformed state-wide.
Just further to your Case 3: if you have Hydrant to Appliance to Lay-Flat with Branch, it's "Case 3". If you just have an Appliance running a Lay-Flat with a Branch it's "Case 3 Tanker".
It's still Case 3 though.

Fair enough. Easier to handle and more manouvreable and not a great deal much water loss compared to 64mm.
