If I buy a scanner from the US they are missing the range 868 - 894Mhz that are available on local models. Maybe other ranges, I haven't done a full comparison. But the US has more variety of models and more up to date models.

Should I care about the Mhz ranges that US models are missing, or do they not matter and I should consider US models?

I wouldnt worry about it
The only thing that is above 868.9875Mhz is TETRA and its demise is coming at the end of 2016 when the Telcos reclaim the 860Mhz band
Some features like output/input frequencies spacing plan is different, we dont have SKYWARN (severe storm tornado service), the family band frequency on 462Mhz doesnt exist here (we have 477Mhz UHF CB) and so on
Not a huge problem

In Tasmania we have a state wide 800MHz EDACS network which do use the 869.xxxxMHz frequencies.

Forgot about the Taswegians!
Probably also, on reflection the same for EDACS in Victoria
